Field & Fire is a Grand Rapids bakery & Café passionate about fermentation, farming, and food. They honor a long-standing tradition of lengthy fermentation that enhances flavor and nutritional value. The bakers allow the dough to ferment up to three days, which results in more digestible baked goods with exceptional taste.
Their bread is made of 100% organic grain, mostly grown 1 hour away and milled in the bakery on stone. They also support sustainable and organic producers.
All dough is mixed by hand, one small batch at a time, which allows the bread to break down easier in digestive tract. Uses very wet dough, resulting in retained moisture and fully hydrated grains and flours.
